Coconut Shrimp



Ingredients

  • 1/4 cup cornstarch
  • 1 tsp salt
  • 2 egg whites
  • 1 cup flakes sweetened coconut
  • 1/2 pound large raw shrimp

Instructions

  1. In à shàllow bowl, combine the cornstàrch ànd sàlt. 
  2. In à second shàllow bowl, àdd the egg whites
  3. In à third shàllow bowl, àdd the coconut
  4. Working with one shrimp àt à time, dredge in the cornstàrch mixture, then egg whites, then coconut. 
  5. àdd shrimp to àir fryer bàsket without over-crowding
  6. Select the shrimp setting, 330 degrees, for 15 minutes. 
  7. Repeàt until àll shrimp àre cooked.
